She ain’t the prettiest.. but she sure was delicious 😋 this is my #vegan lasagna I made yesterday! This lasagna was deliciously cheesy and packed with veggies! I’ve been intimidated by making lasagna, not sure why because this was super easy to make! Swipe for Recipe➡️➡️ and see notes below ⬇️⬇️⬇️

✨Recipe✨& notes: the vegetables I used in my lasagna, were mushrooms, broccoli, and yellow peppers, and you can use a variation of whatever veggies you prefer honestly! For the “tofu” mixture the recipe Calls to make, I added in additional ingredients that I found while researching a copycat Pizza Luce version of their vegan “rinotta” cheese: parsley, onion powder, soy milk, (mustard powder, some flour – I DID NOT USE). Oh and I usually don’t measure.. I get the feeling when to stop and I listen to that, but otherwise just season until your heart desires! (More seasoning = better vegan tofu ricotta). I also added shredded @miyokoscreamery mozzarella (to DIE for) on top of the lasagna, along with parsley! Enjoy 😘
