Sharing with you the fancier version of Dhokla ??Zucchini and Carrot Bread?? This whole wheat and amaranth flour bread is for all the experiment frenzy cooks.? Recipe:
Take a large bowl and put in the following ingredients :

1 cup grated carrots?
1 cup grated Zucchini?
1 cup wheat flour
1/2 amaranth flour
1/3 cup corn
1/2 tbsp baking soda
1/2 tbsp baking powder
1 big tbsp of mix seeds
1/3 cup coconut oil

Mix all the dry ingredients first and then add milk/soy milk / almond milk to form a thick batter.

Now add the spices,
1 tbsp turmeric powder
1 tbsp coriander powder
1 teaspoon nutmeg powder
1 teaspoon black pepper
1/2 tbsp chilli powder
Salt to taste

Pour the mixture into a greased baking tray and cover the edges with sliced zucchini. Cover it with some more moxed seeds. Bake it for around 30-35 min at 180°C.

Once ready, let it cool for around 15 kin and serve it with sliced scallions and any dip of your choice.

On the side is roasted sweet potato with rosemary, a spoon of oil, slat and pepper and it is my absolute favourite.

Also, amaranth flour does wonders to the bread.
