Sharing my recipe for the easiest and most gingery vegan cookie! No molasses and no need to refrigerate the dough.

Ingredients:

375 g Plain Flour
1 tsp Bicarbonate of Soda
3 tsps Ground Ginger
120 g Vegan Butter @purefreefrom
175 g Dark Brown Sugar
5 tbsps Maple Syrup
1 Flax Egg

How to make it:

– Preheat the oven to 180C Fan and line the baking trays with Parchment paper
– To a large bowl add the flour, bicarbonate of soda, ginger and the butter
– Rub together with your fingers or use the blender, until it resembles breadcrumbs
– Mix the sugar into the mix and combine, then add the Maple Syrup and flax egg
– Use your hands and combine until it is a smooth dough
– Then roll the dough out onto a lightly floured work surface
– Roll it out to 1/2cm thickness and cut out your desired shapes
– Place the cookies on the lined baking trays and bake in the oven for 10-11 minutes
