Sesame Ginger Veggie Noodles 🍜

1 head bok choy
1 head broccoli
1 carrot
1 1/2 peppers
3 garlic cloves
Soba rice noodles
1/4 cup coconut aminos (and more to drizzle on top when serving)
1 tbsp chopped ginger (to taste)
Sesame seeds
1 tbsp-ish Sesame oil (more or less to taste)
1 tbsp-ish Avocado oil

Choose your noodles of choice and boil according to package. I used Soba rice noodles. In a large pan or wok, add in the avocado oil, chopped garlic, ginger, and onion. Sauté them until they are almost cooked. Add in the coconut aminos, chopped broccoli, peppers, and carrots. I used a peeler for the carrots. After 10 minutes or until desired cooking level of the veggies , you can add in the chopped bok choy. Let it cook for another 5 minutes. Add in a tablespoon of sesame oil (can do more or less) and mix.

When it’s ready to be served, you can top off with sesame seeds and some more coconut aminos if needed. 👌🏻
