See the shine of the olive oil glazed veggies, hear the crunch of the roasted chickpeas and taste the goodness of this amazing hummus salad bowl. It’s nutritious and delicious and I can bet on the feelgood factor of this salad. It hits the right spots.

Ingredients : soaked chickpeas, zucchini, babycorn, carrots, beetroot, olive oil, hummus, sesame seeds, onions, cabbage, cottage cheese.

Method : 1. For the roasted chickpeas : 1) Take some soaked chickpeas.
2. Make a mixture of garam masala, piri piri powder, red chilli powder, oregano and olive oil.
3. Cover the soaked chickpeas in this masala.
4. Pre-heat the oven at about 200°C for 5 minutes. Put them in the oven at about 180°C for 15-20 mins

2. For the hummus : 1. Take soaked chickpeas, toasted sesame seeds, garlic cloves, lime juice, ice cubes (gives the creaminess), salt to taste and blitz them all in a blender till it reaches the right consistency

3. Dice carrots and beetroots. (You can pickle them too, do so by putting it in vinegar, they’d taste really nice)
4. Sautée the babycorn and the zucchini in olive oil and dried herbs.
5. Take some very finely chopped onions and cabbage.
6. Mix all these ingredients together with the hummus. Add to it raw cottage cheese (I enjoy eating paneer raw, if you don’t marinate and grill it)
7. Garnish with toasted sesame seeds
