Scrambled tofu in lettuce cups 🥬 I was clearly not watching the sweet potatoes carefully enough, because they got a little burned :}

Lately I have not been getting much sleep. Don’t get me wrong I get some sleep (maybe 5hrs,) but not enough for me personally. I can tell that it’s contributing to my mood, energy and overall health. I like sharing this stuff on here because I want to be held truly accountable. Health is wealth and I think if you follow me you would generally agree. So here it is, I am going to do my best to get more sleep!! Ok that’s it I hope all of you had a great nights sleep 🙂

1 medium sweet potato chopped into cubes
1/2 of an extra firm block of tofu
1/2 tsp granulated garlic
Salt and pepper to taste
Topped with: avocado, chopped green onions and hempseed hearts

Tofu scramble-
Sauté the chopped sweet potato with olive oil. Then when the sweet potatoes soften, add the tofu, sauté until the tofu has some crispy color and the potatoes are fully cooked. Now add your salt, pepper, granulated garlic and any other spice you prefer. Take the scramble off heat and serve inside a lettuce cup with the toppings of your choice 😉 @bitchinsauce , hummus and avocado are my favorite toppings!
