Scalloped Potatoes

These easy, creamy scalloped potatoes are so easy to prepare. Whip them up for an easy holiday side dish or family-style meal.

Ingredients
for 2 servings
* 2 tbsp vegan butter
* 2 cloves garlic
* 3 tbsp flour
* 1 1/2 cup soy milk (350 mL)
* 1 tsp salt
* 1 tsp pepper
* 1 tbsp nutritional yeast
* 4-5 medium sized potatoes, peeled
* handful of grated vegan cheese (optional)
* fresh parsley, chopped, for garnish

Preparation
* Preheat oven to 350°F (180°C).
* In a small pot, melt the butter and fry the garlic until it’s just starting to brown. Add the flour, salt, pepper and nutritional yeast. whisk until there are no lumps.
* Slowly add the milk while whisking to make sure the mixture is smooth.
* Bring to a boil, then remove from heat.
* Cut the potatoes into thin slices, and place them in a baking dish.
* Pour the sauce on top of the potatoes, then sprinkle with vegan cheese.
* Bake for about 1 hour, until the top is golden brown.
* Sprinkle chopped parsley on top, then serve.
* Enjoy!
