Savoury Stuffed Pancakes

The little one wanted pancakes for breakfast this morning and there was a little left over so I adapted it for my lunch. I’m working from home today so it’s nice to be able to have something a bit different.
It’s my usual vegan pancake recipe (see earlier posts a for recipe) with green chilli and spring onion greens added to the batter.
Pour batter into a hot pan greased with olive oil. Cook for 2-3 minutes each side.

For the stuffing;
Ingredients
Drizzle garlic oil
1 medium carrot grated
1 medium tomato diced small
Cup fresh spinach
1 tablespoon pine nuts
1 teaspoon paprika
1 teaspoon fresh oregano (dried will also do)

Method
Add oil, carrot, tomato, pine nuts, paprika and oregano to a pan on a medium heat. Cook for 4 minutes, whilst stirring. Add spinach and cook for a further 1 minute until wilted and combined.
Place pancake on a plate, add stuffing mixture, top with grated cheese (vegan or regular) and black pepper, fold over and serve.
