SAVOURY CHEESY FRENCH TOAST ?VG
Brunch at home, only CAFE style ?
THE FRENCH TOAST:
~ 4 thick slices of sourdough @volarebread
~ 3 tbsps all purpose flour
~ 1 tsp ground turmeric
~ 2 tsps dry rosemary
~ S & P to season
~ 1 cup plant-based milk
~ 1 tbsp apple cider vinegar @ceresorganics
~ Olive oil for frying
~ Vegan mozzarella cheese @angel.foodnz for the topping
THE ROASTED PEPPER SAUCE:
~ 2 medium-sized red pepper
~ 4 cloves garlic
~ 1/2 tbsp olive oil
~ 1/2 tbsp lemon juice
THE METHOD:
~ Season whole pepper & garlic (skin on) with salt & pepper, olive oil
~ Grill in the oven for 15-20 mins until nicely charred
~ Meanwhile, combine apple cider vinegar with milk and set aside for 5 mins to cuddle
~ Combine all the ingredients for the French toast batter
~ Soak sourdough in the batter and fry until both sides golden
~ In a baking tray/oven proof pan, top up vegan cheese and bake in the oven (180c) for another 5 mins until cheese nicely melted
~ In a blender/food processor, blend roasted pepper, garlic along with olive oil & lemon until smooth and season
~ Serve up your French toast with pepper sauce and freshly sliced avocado
~ Serves 2-3
