Savory Vegan “Meat”balls

These vegan meatballs are ultra healthy and ultra yummy! Made with oats, black beans, mushrooms and onions. I served this batch in a bath of my vegan gravy but they are also fantastic in a classic spaghetti sauce.

Recipe:

225g mushrooms
1 onion roughly chopped
4 cloves garlic, diced
1 cup oats
1 tbsp flax +2 tbsp water
1 can black beans
1/2 tsp oregano
1/2 tsp rosemary
1/2 tsp basil
Salt to taste
Pepper to taste

In a food processor, blend oats until fine. Set aside.

Sautee onions, garlic and mushrooms until tender, add salt, pepper and spices and cook for an additional 2 minutes.

In a small bowl combine ground flax seed with water and let sit for 5 minutes.

Add all the ingredients back into the food processor and blend until a chunky, sticky mixture is formed.

Pre-heat oven to 375 Fahrenheit.

Using your hands, create one inch balls with the mixture and evenly place on a baking sheet lined with parchment paper.

Bake for 10- 15 minutes, or until they begin to brown.

Serve with your favorite vegan gravy or spaghetti!
