Easy Mexican style rice filling for Veggie Burrito by @plantbased.traveler

Ingredients
1 cup quick cook brown rice (rinsed)
1.5 cups water
1 can tomatoes with green chilis
1 tsp garlic and onion powder
1 tsp paprika
1/2 tsp cumin
Salt and pepper to taste

Instructions
Bring everything to a boil in a small pot, cover with a lid and let simmer on very low heat for 15-20 minutes.
Turn off the heat, let sit for another 5 minutes, fluff up with a fork. Enjoy!
