Vegan Grilled Cheese

Homemade Vegan Mozzarella:
1 can coconut milk (400 ml)
1/4 cup almond milk
1/3 cup nutritional yeast
1/2 tsp garlic powder
1/2 tsp onion powder
½ tsp sea salt
3 tbsp arrowroot powder
In a blender add coconut milk, almond milk, nutritional yeast, garlic powder, onion powder, sea salt and arrowroot powder. Blend until smooth consistency. Transfer to saucepan and bring to medium-high heat. Warm mozzarella, stirring often, until thick and stringy in consistency (5-10 mins).
Vegan Grilled cheese:
4 tsp vegan butter or coconut oil
2 slices sourdough bread
1/4 cup vegan mozzarella
pinch sea salt and pepper
1. Butter two slices of sourdough bread on both sides (i.e. butter all four sides) and sprinkle with sea salt. Bring a skillet to medium heat and toast the bread slices until golden in colour, then flip and toast the other side.
2. Once it’s ready, finish by lathering each toast with 2 heaping tablespoons of vegan mozzarella. Season with sea salt and pepper. Then flip one slice of bread onto the other to make a sandwich.
