Saturday Taco 🌮🌮🌮 Buffet for the fam!
See previous post for details on ingredients. I marinated the defrosted @ozofoods ground on Friday with taco seasoning, sriracha, and olive oil. Browned it in the wok, then added diced red & orange bell pepper and purple onion, tossing frequently until those onions were just right. Transferred taco “meat” to a glass container and then stir fried marinated mixed veggies (bell pepper, purple onion, shredded carrot).
While this was happening I had @gardein fishless filets in the air fryer. 2 cycles of the frozen nuggets setting. The @cascadianfarm brown rice, corn, black bean, bell pepper mixture was an after thought but went well as an option. Two griddles going to heat up the tortillas and hard shells in the toaster oven.
Something for everyone and @zach_the_magnificent requested tartar sauce so I made some with jalapeño sweet relish and vegan mayo. Good call! The buffet was a success and Men served the Ladies to order. My favorite was a crunch wrap with a blue corn hard shell 🌮 wrapped in a warm corn tortilla. The fishless taco 🌮 with tartar sauce was a close second. Couple more pics to follow.
