**Saturday dinner**
Mediterranean butter beans
Ingredients:
2 cans of butter beans
1 pack or vegan mince (I used meatless mince)
1 chopped onion
1 chopped garlic
1 can of chopped tomatoes
2 tbsp tomato paste
1 tsp olive oil
1/2 cup of boiled water
1 veg stock cube
1 tsp maple syrup or honey if not vegan
Salt, pepper, mixed spices and dill
Method:
– heat oil then add garlic and onion and stir for a few seconds
– add mince and stir occasionally on lower heat until cooked. Season with little salt and mixed spices.
– add beans and all other ingredients except dill and simmer until sauce thickens (~ 1/2 hour).
– season with some dill and serve.
