Saturday curry night 🍴

Chickpea masala with rice and @icelandfoods vegan naan

ingredients:
1 tin of chickpeas
1 Onion
2 tbs Garam masala spice mix
3 cloves of garlic
1 tablespoon ginger purée or fresh
1 tin chopped tomatoes
2 medium, peeled carrots
1 apple, peeled
250ml coconut milk
Salt & pepper to season

Method:
1. Chop onion and add to an oiled pan on a medium heat, sauté until soft and brown
2. Add 2 table spoons of garam masala spice mix, ginger and garlic to onions, cook for 2-3 minutes, adding water if begins to stick.
3. Add tin of chopped tomatoes, diced apple and diced carrots. Cook for 10 minutes until carrot softens.
4. Remove from heat, either place in a blender or use a hand blender until thick and smooth.
5. Once blended transfer back to the pan adding the chickpeas and coconut milk, stir and simmer for 15 minutes.
6. Service with rice and naan of your choice and enjoy 🤤

The made enough for 2 large portions or 3 smaller ones. I made it just for me so going to freeze other portion for a quick tea when I need it ❄️
