~ Satay Pumpkin & Tofu Curry ~
When it comes to sauces, satay has always been my go to and the flavour in this curry doesn’t disappoint!! I love to meal prep this recipe on the weekend to quickly heat up for dinner and enjoy throughout the week. It’s so so satisfying and the pumpkin just melts in the mouth 🤤
Ingredients (serves 4-5):
1/2 Tbsp coconut oil
1 red onion chopped
3 tsp minced garlic
2 tsp minced ginger
2 Tbsp tomato paste
2 Tbsp curry powder
1 Tbsp garam masala
1 Tbsp cumin
1 tsp ground coriander
1 tsp turmeric
1 tsp cinnamon
1 block firm tofu, chopped into cubes
1 red capsicum, diced
2 cups diced pumpkin
1/2 cup diced cherry tomatoes
1/4 cup peanut butter @mayversfood
1 Tbsp soy sauce
2 tsp brown sugar @natvialiving
1 can coconut milk
1 cup veggie stock
Heat the coconut oil in a large fry pan over medium heat.
Add the onion, garlic and ginger and sauté for 3mins.
Then add the tomato paste, all the spices and veggies. Stir together and cook for another 5mins.
Add tofu and pour in the coconut milk. Stir until everything’s well combined.
Lastly, add the peanut butter, soy sauce, brown sugar and veggie stock. Stir to combine. Reduce heat to low and leave curry to simmer for 20mins. Occasionally stirring to avoid anything sticking to the pan.
Remove from heat, cool and serve with rice, a dollop of coconut yogurt and salt/pepper. Enjoy!!!
