Recipe – makes 3-4 pot pies

Ingredients:
½ cauliflower – cut into half florets
Olive oil
Salt
2-3 sheets of vegan puff pastry

Sauce:
2 tbsp soy sauce
½ tsp garlic
½ tsp sambal chilli sauce (or variant)
1 ½ – 2 heaped tsp peanut butter
200ml coconut milk
2 spring onions – cut finely

Method:
Add cauliflower to an oven tray and drizzle with oil and salt. Cook at 180 degrees Celsius, for 40 minutes. (To save time, you can boil the cauliflower until medium soft, 10 -15 mins).
While that’s cooking, add soy sauce, garlic, chilli sauce, peanut butter, coconut milk and onions to a small pot.
Cook over a small flame, stirring for 10 minutes.
Take off heat and mix cauliflower with the sauce.
Cool mixture in the fridge. At this time, preheat oven to 200 degrees Celsius (390 degrees Fahrenheit).
Meld pastry into pie tins and fill with mixture.
Cook in the oven for 35 – 40 minutes.
