SALTED CARAMEL MAGNUMS 🌱🍦🍯⁠

Vegan – gluten free – refined sugar free⁠

Can’t chose between salted caramel and chocolate? This one’s for you! ⁠

RECIPE⁠

INGREDIENTS⁠
Base⁠
– 1 cup cashews (soaked in hot water for 5 minutes then drained)⁠
– 1 cup canned coconut cream⁠
– 1/2 cup maple syrup⁠
– 1 tsp vanilla essence⁠

Caramel⁠
– 1/2 cup smooth peanut butter⁠
– 1/2 cup rice malt syrup⁠

Coating⁠
– 2 blocks vegan chocolate⁠
– 1 tbsp smooth peanut butter⁠
– handful of chopped almonds⁠

METHOD⁠
1. Prepare your magnum moulds and set aside. Add all ingredients for the base in the blender and blend on a high speed until smooth and lump free. Pour the mixture into the moulds and set in the freezer for 8 hours.⁠
2. Make the caramel by mixing all ingredients together in a bowl. Remove the magnums from the moulds, then spread the caramel on the back. Return to the freezer.⁠
3. Melt the chocolate, then mix in the peanut butter. Transfer to a tall glass.⁠
4. Dip the magnums in chocolate, then place them on baking paper and top with almonds. Repeat for all magnums. Place in the freezer for 15 minutes before serving.⁠
Store in the freezer, then enjoy!⁠
