Salted Caramel Banana Crumble Muffins ?

It’s been a cold rainy day today, perfect baking weather!! I had a few overripe bananas lying around and I was just going to prep some banana bread for the week but then I decided to play around a bit and come up with a recipe to share. I made the bases of these as standard protein banana muffins but then crumbled up a @purabon salted caramel protein ball and added it to the mix for extra sweetness and flavour. Can confirm these are amazing! –
INGREDIENTS
For the Muffins:
▪️3 Bananas
▪️1/4 Granulated Sweetener ▪️1/3 cup Coconut Oil (melted)
▪️1 Flax Egg
▪️1 tsp Vanilla
▪️1/2 tsp Salt
▪️1 cup Self Raising Flour
▪️1 scoop Vanilla Protein Powder (@macr0mike)
▪️1 Purabon Salted Caramel Protein Ball

For the Crumble:
▪️1 Purabon Salted Caramel Protein Ball
▪️3 tbs Rolled Oats
▪️1 tbs Coconut Oil (melted)

METHOD:
1. Preheat oven to 180°c
2. Add bananas to a bowl and mash. Add sweetener, coconut oil and flax egg. Stir until combined.
3. Add vanilla, salt and flour. Stir until combined.
4. Crumble up protein ball and stir in to the mix.
5. Make the crumble by mixing together protein ball, oats and coconut oil.
6. Pour mixture into muffins cases or tins and bake for 25 minutes or until cooked through (I added the crumble on top after about 10 minutes into baking). 7. Leave to cool and store in an airtight container in a cupboard for 3-4 days or the fridge for a week. –
I really loved the touch of adding a protein ball into these muffins. You guys definitely need to try it out! ?
