|Sabudana vadas aka tapioca pearl fritters!

These gems are crunchy, nutty, aromatic and one of the best appetizers we’ve had!! They are crispy from the outside and sticky & light on the inside. Made with tapioca pearls or sago or sabudana as I have known growing up is a fasting food. Translucent pearls are mixed with potatoes, spices and herbs and dipping these with chutneys makes for the yummiest appetizer!

Ingredients ?

1/2 cup tapioca pearls
1/2 cup water
1/3 cup roasted peanuts
1 potato
1 tbsp minced green chili and ginger
1 tbsp finely chopped cilantro
1 tbsp finely chopped curry leaves
1 tsp cumin seeds
1 tsp pink salt
1/2 tsp sugar(optional)
1 tbsp lemon juice

Directions ?

? Rinse the tapioca pearls and soak the pearls in 1/2 cup of water for 5-6 hours. Or overnight is best. Tapioca pearls will typically double in volume. See the first picture and tip below.*

?Boil, peel and grate potato. This should give you 1/2 cup of potatoes.

?Roast peanuts slightly and using a mortar and pestle grind to a medium coarse. Mince some ginger and green chilli to a coarse paste. Finely chop both cilantro and curry leaves.

?Combine all Ingredients (including herbs and spices) and form a nice dough. Press and flatten balls into 10-12 pieces.

?Fry on medium heat to an even beautiful golden on both sides.

?Serve with cilantro-mint or a tamarind chutney.

These gems puff up so gorgeously you just cannot wait to dig in! What’s there not to love about them!

*Take a Pearl between your fingers. If it mashes easily, it’s ready for the process. If not it needs to be soaked for longer than 5 hours. Best is to let it soak overnight.
