i just know this pic will stick out like a sore thumb on my page but i struggled to get a good photo at 10pm when the sun had vanished πŸ™

regardless of the photo though, this was bloody delicious, and full of produce from our garden as well as some locally grown farm produce


-2 large carrots, peeled and chopped
-8 golf ball sized turnips, chopped
-1 sweet potato, peeled and chopped
-1 leek, chopped
-3 cloves of garlic, crushed/diced
-a few handfuls of dried lentils
-1 tin of chopped tomatoes
-300-400ml of veg stock
-5 or 6 new potatoes, sliced thinly
-2 bay leaves
-4 leaves of sage
-a few twigs of thyme
-1 stick of rosemary
-2 teaspoons dried oregano

1) after preheating your oven to 170 degrees (150 fan)!begin by heating oil on a medium heat, and adding your leek till it softens. once softened, throw in garlic and cook for a further few minutes before throwing in your veg one lot at a time, cooking for a minute or two between each then for 5-10 minutes once all the veg is in
2) next, stir in your oregano, sage, rosemary, thyme, and celery salt before throwing in chopped tomatoes, stock, and lentils
3)once stirred, allow to simmer for around 10 minutes without a lid so the sauce can thicken a little
4) next, arrange your potato slices in a layer on top of your veg mixture and sprinkle with some more oregano before placing in the oven with a lid on for 1-1 1/2 hours
5) once the potatoes are soft, take off the lid and allow it to cook for a further 10-15 minutes or until you have a nice crispy top on your hot pot, et voila!

I served mine with peas and plenty of gravy
