ROOIBOS INFUSED VEGAN BUTTERNUT PANCAKES
2 cups gluten free flour
2 cups non dairy milk
50 ml Northern Plateau Rooibos Tea
1 cup unsweetened butternut purée
3 tablespoons coconut oil (any neutral flavoured oil will work)
1 teaspoon pure vanilla extract
2 teaspoons Northern Plateau Rooibos instant powder
1 teaspoon baking powder
1 teaspoon cinnamon powder
1 teaspoon fine cardamon (optional)
1 teaspoon fine aniseed (optional)
1/4 teaspoon salt
2 Tablespoons ground flax seeds
1.)Whisk milk,butternut puree,oil,flaxseeds,vanilla,Rooibos tea in a medium sized bowl whisking enough to incorporate the flaxseeds.Let sit for 15 – 20 mins.
2.)Whisk all dry ingredients together in a bowl.
Slowly add wet ingredients to dry ingredients,mixing well until incorporated.
3.)Heat pan over medium heat,lightly coat surface of pan with very small amount of oil.
4.)Ladle about 1/4 cup of pancake mixture into pan and cook on both sides for 1 minute or until golden brown.
