Rocket, sweet potato, pomegranate and β€œfeta” salad with seeds & pecans πŸ₯—
This salad was banging and so easy to make and the feta is the Sainsburys vegan Greek style cheese.

INGREDIENTS:
– 1 sweet potato
– 1/2 can chickpeas
– 2 cups rocket
– 1/3 cucumber, sliced & halved
– 2-3 tbsp pomegranate seeds
– A few pecans
– Sprinkle or pumpkin seeds & pine nuts
– Vegan feta (optional)
– 2 tbsp olive oil
– 1 tbsp balsamic glaze
– 1/2 lemon, juiced
– 1/2 tbsp tahini
– Cayenne, paprika, garlic, salt and pepper

METHOD:
1. Chop up the sweet potato and put it in a bowl. Wash and drain the chickpeas and add those to the bowl too.
2. Add 1 tbsp of olive oil along with the spices, garlic, salt and pepper then put these on to a baking tray add throw in to the oven for 30 mins on 180Β°C.
3. Add the rocket and cucumber in to a bowl.
4. Once the potatoes and chickpeas are cook, layer those on to the rocket and cucumber.
5. Then add the cheese, pomegranate, seeds and nuts.
6. Finally add the rest of the olive oil, lemon juice, tahini, balsamic glaze, salt and pepper. I like to add a little sprinkle of chilli flakes here for extra heat πŸ™‚
