ROASTED YELLOW BELL PEPPER PASTA

If you’re like me, sometimes you really don’t have time to spend in the kitchen, but you still want a delicious meal. This pasta recipe is quick fix that requires few ingredients and very little of your time and yet is a show-stopper.

Ingredients

12 oz of pasta of your choice
2 yellow bell pepper
1 cup of soy milk
¼ cup of pine nuts
1 tbsp of nutritional yeast
1 tsp of salt
4 cloves of garlic

Cut the bell peppers in half and put them in the oven at 350°F for 30 minutes. Then, to a blender, mix the roasted bell peppers and all the other ingredients. Cook your pasta according to the instructions. Once cooked, pour the sauce on the pasta and voilà!
