Roasted Veggie Wraps 🍆🥑

A delicious lunch idea for when you don’t really feel like cooking! And you can use up vegetables that you need to get rid of.
I added some falafel that needed to eaten too 😋

Ingredients (serves 4)
* 1 bell pepper, cut into sticks
* 1 carrot, cut into sticks
* 1 eggplant, cut into sticks
* Large handful of mushrooms, chopped
* 1/2 red onion, chopped
* Cumin powder
* Cajun seasoning
* Garlic powder
* Onion powder
* Balsamic vinegar
* Paprika
* Salt
* Pepper
* 4 large tortillas
* 1 large avocado, sliced
* Spinach
* Hummus for spreading
* Optional: vegan sauce of choice or some vegan sour cream to add into wrap

Steps
➡️Set oven to 350°F or 180°C. Gather your vegetables for roasting – I used bell peppers, eggplant, carrots, mushrooms, and red onions.
➡️Cut the peppers, eggplant and carrots into sticks. Chop up the mushrooms and onions into pieces.
➡️In a baking tray, add in some oil, cumin, garlic powder, onion powder, paprika, Cajun seasoning, balsamic vinegar, and some salt & pepper. Add in peppers, eggplant, and carrots. Mix and ensure vegetables are well covered in spices and oil. Cook for 10 mins.
➡️Remove from oven and add in mushrooms and red onions. Add in a bit of oil, balsamic, and other seasonings if needed. Cook for another 10 mins.
➡️Warm up tortillas and begin assembling the wrap. Spread some hummus on the tortilla and add a small handful of spinach.
➡️Once vegetables are ready, remove from oven and add a portion of the veggies onto the wrap.
➡️Top with avocado and sauce of choice. Wrap it up! 🌯
