✨🫑Roasted vegetable pasta with fresh spinach & Homemade vegan garlic bread made by my lovely @dawnside_mike 🖤✨

So easy and delicious!🍝

You will need:

-for the main
• Pasta (I used @mr_organic penne)
• 1 Large onion (I used half red & white)
• 2 large bell peppers (I used red & yellow)
• 2 cloves of garlic
• 1/2 cup of baby tomatoes (I used on the vine plum)
• Spinach
• Passata (I used @mr_organic )
• 1tsp parsley
• 1tsp paprika
• 1tsp crushed chilli flakes
• 1tbs oregano
• Salt
• Pepper
• Olive oil
• 1 large slice of bloomer bread (I used @dulcesol bloomer)

-For the garlic bread
• 3 cloves of garlic
• 2 tbsp plant based salted butter
• 1/2 tsp parsley

-How to-
1. Preheat oven 180 fan/ 200

2. Cut up the peppers into large bite size pieces, onions into half then half again, baby tomatoes in half, crush garlic and cut very finely then pop it all into a oven proof tray.

3. Poor olive oil onto the veg but not enough to cover the bottom, Session well, salt, pepper, paprika, crushed chilli, oregano, i also added some garlic Italian spices (optional) and pop into the oven for 20 minutes, occasionally pulling out and mixing.

4. Start preparing your garlic bread by mixing the plant based butter, 3 crushed garlic & parsley into a small bowl.

5. Generously spread the garlic butter onto the slice of bread.

6. When the roasted veg is getting soft, pop the pasta into a pan with hot water & salt and put onto medium heat.

7. Place vegetables onto the bottom shelf and place the garlic bread into the oven for around 15 minutes on 180 fan or when the top becomes golden.

8. Once the pasta is soft, drain the pasta and add passata sauce to the pasta and mix, adding in the roasted vegetables.

9. Place a generous amount of spinach in the bottom of the bowl, add in the pasta on top adding vegan cheese to top off (but optional!)

10. Once garlic bread is golden, slice into even fingers and enjoy!
