Roasted Veg and Pesto Sandwich from @happyskinkitchen ⠀

Grab a couple of slices of your favorite bread, and build this for a comforting lunch this weekend!⠀

Ingredients:⠀

1 courgette – cut into thick slices⠀
1 red bell pepper – cut into large pieces⠀
a handful of pitted olives – roughly chopped⠀
a drizzle of olive oil⠀
salt & pepper to taste⠀
4 tbsp of hummus⠀
handful salad cress or lettuce⠀

For the pesto:⠀
20-30g of fresh basil⠀
2 tbsp of pine nuts⠀
1 tbsp of nutritional yeast⠀
1 garlic clove – crushed⠀
2 tbsp of extra virgin olive oil⠀
the juice of 1/2 lemon⠀
salt & pepper to taste.⠀

4 slices of your favourite bread⠀
Add the sliced courgette and pepper to a baking tray, drizzle with some oilve oil, salt and pepper and roast in the oven at 200 degrees Celsius for 25 minutes. In the meantime make the pesto. Simply add all the ingredients into a food processor and blitz until smooth.⠀
To assemble the sandwich spread a layer of hummus on one slice and some pesto on the other. Top with the roasted veggies, chopped olives and salad cress and close the sandwich.⠀
If you have any leftover pesto store it in the fridge for few days.⠀
