Roasted Sweet potato with sweetcorn, black eyed beans, guac & garlic Mayo.
Threw this together for lunch today. Heavenly divine yumminess. ? ? Here’s the homemade recipe below:
1 x sweet potato
1 x tbsp nutritional yeast
2 x heaped tbsp beans (I used black eyed beans)
2 x heaped tbsp sweetcorn
Salt & pepper
1 tbsp x Breadcrumbs
Oil (I used vegetable oil)
1 tbsp x sliced Spring onions (scallions)
1 tsp x Vegan Mayo
2 x tbsp x Plant based milk (I used oat milk)
1 tbsp x Vegan garlic Mayo (for topping)
1 tsp x chopped parsley
1 tsp x vegan butter
Guacamole
1 x small avocado
1 x tsp lime juice
1 x tsp finely chopped red onion
Half finely chopped tomato
1 x tsp finely chopped red chilli
Salt & pepper
Couple basil leaves chopped
? Coat in small amount of Oil & salt & Roast Sweet Potato
? Cut in half and scoop out and add to bowl & mash
? Add nooch, plant based milk & vegan Mayo, vegan butter, salt & pepper
? Add beans, sweetcorn to mix and carefully add back into jackets.
? Top with breadcrumbs
? bake in oven for 15-20 mins @ 190c
? Top with guacamole, vegan garlic Mayo & chopped spring onions & parsley
