Roasted Sriracha Cauliflower Bites with Peanut Dipping Sauce.
Last week my neighbour leant me two Vegan recipe books called “Thug Kitchen” & “Thug Kitchen 101” by @badmannersfood
They are great books filled with lots of really easy and practical vegan recipes. These cauliflower bites came up crispy on the outside and soft on the inside. The vegans in my house were VERY happy and so was I ? I would definitely make these again for a dinner party entree or party nibbles (I talk about these events as if I remember what they are ?). I must say tho, these come with a definite hot & spicy warning ??
How To: Cut up cauliflower head into small florets the size of your thumb. In a bowl whisk 1/2 cup plain flour and 1/2 cup water & whisk until its lump free. Dump the florets in a bowl and stir until covered (swipe ➡️). Remove florets and place in your AF basket – sprayed with oil. AF on 200 degrees for 15 mins, turning every 5 minutes. Meanwhile make hot sauce by placing 2 tsps oil, 1/2 cup sriracha sauce, 1/4 cup rice vinegar and 1/2 tsp soy sauce in a small saucepan. Stir over a low heat until the sauce is warm but not bubbling. Pour sauce into a bowl. Place cooked airfried florets in hot sauce and stir. Place florets back in airfryer leaving extra sauce in the bowl and AF on 200 degrees for 6-8 minutes.
Serve with peanut sauce on the side.
Notes: you can use any hot sauce instead of Sriracha. I didn’t have rice vinegar so I used apple cider vinegar. You can also serve these at room temperature.
Peanut Sauce: Mix the following ingredients together in a bowl and place in refrigerator until needed
1/4 cup warm water
1/4 cup creamy peanut butter
2 tbsp rice vinegar
2 tsp minced garlic
1 tsp soy sauce
1 tsp maple syrup
