“Roasted Butternut Squash Lasagna” 🍁
Because sometimes you just need pasta! I made this last week for meal prep and I honestly would be making up a recipe bc I don’t remember what went into regarding measurements/ spices 😅
Here’s an ingredient list below for some fall-flavored inspo!
Ingredients:
– 1 Package Lasagna Sheets (I like the flat sheets bc presentation, and the ones with curly ridges at the end are too dense IMO)
– Butternut Squash, roasted
– Balsamic Mushrooms
– Dino Kale (holds up best in the oven)
– Onion fresh & powdered
– Garlic fresh & powdered
– Ricotta (added nutritional yeast, garlic/ onion powder, salt to taste)
Topping:
– Mozzarella
– Parmesan
– Sun Dried Tomatoes in oil
– Crispy Sage
The Sauce:
– Butternut Squash, roasted and blended
– Oat Milk
– Nutritional Yeast
– Garlic & Onion Powder
