ROAST VEGETABLE QUINOA SALAD
Can you ever have too much veg? 🤷♀️
This is such a healthy, easy and filling meal and a great one for meal preps for the week too! 🤩
Here is what I used but any of your favourite veg and dressings would work!
The recipe for the dressing I used is by @vedgeout 💕 sooo delicious!
1 small sweet potato roasted
2 carrots roasted
1/2 a red capsicum roasted
1 small yellow capsicum roasted
1 beetroot roasted
2 kale leaves steamed
1 cup of broccoli steamed
1 cup of quinoa
1/2 cup almond milk
1/2 cup nutritional yeast
2 tablespoons tahini
1 tsp Garlic powder
1/2 teaspoon salt
Cook quinoa with 2 cups of water either in the microwave or on the stove.
Serve with veggies and drizzle with dressing of choice.
