RHUBARB STRAWBERRY CAKE RECIPE πŸ“β£οΈπŸ°
not the prettiest lady, but a very tasty one, if you make her, lemme know xx
ingredients:
1/2 cup mashed banana (can sub applesauce or puréed peach)
1/2 cup oil
1 cup soy milk + 1TB apple cider/ white vinegar
1 1/3 cup raw sugar
2 tsp baking soda
4 tsp baking powder
pinch of salt
3 tsp rosemary (optional)
2 1/4 cup plain flour (I used @ardorglutenfree)
1/3 cup chopped rhubarb
1/3 cup chopped strawberry *dont make pieces too small or cake will be too wet*
method:
– mix soy milk and vinegar in a bowl, allow to sit for 5 minutes to thicken.
– add banana/ applesauce/puréed peach and oil, whisk thoroughly to combine then add sugar, mix again.
– sift flour, baking powder and soda gradually in batches (eg 1/2 a cup at a time).
– fold in gently rhubarb, strawberries and rosemary.
– bake at 180 for 45 minutes, or until a skewer comes out clean.
I topped mine with a marbled vegan cream cheese icing, but I’m sure this cake would be lovely without icing or perhaps served with some custard/ vanilla ice cream situation!
