Ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 onion, finely chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 garlic clove, crushed⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup frozen peas⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp nutritional yeast⠀⠀⠀⠀⠀⠀⠀⠀⠀
handful baby spinach⠀⠀⠀⠀⠀⠀⠀⠀⠀
unsweetened coconut/almond milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
salt & pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
pasta of choice⠀⠀⠀⠀⠀⠀⠀⠀⠀
avocado + hemp seeds as optional toppings⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions:⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Add a dash of oil to a pan with 1/2 finely chopped onion⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Cook the onion for 5 minute until soft and caramelised⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Add 1 crushed garlic⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Add in 1/2 cup of frozen peas + enough unsweetened coconut or almond milk to cover the peas⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Let it cook for another 5 minutes – at last add in a generous handful of baby spinach + plenty of salt & pepper and about 2 tbsp of nutritional yeast⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Pour everything into a blender and blend until super smooth⠀⠀⠀⠀⠀⠀⠀⠀⠀
– Mix it with the pasta of your choice (i used brown rice fusilli) and top it with some sliced avocado + hemp seeds 🙌🏻🌱🥑⠀⠀⠀⠀⠀⠀⠀⠀⠀
If you don’t have the avocado you can leave it out ( although add a nice creaminess) and add some extra cooked peas or cherry tomatoes on top 🤗It was so simple but sooo delicious.⠀⠀⠀⠀⠀⠀⠀⠀⠀
