Healthy Sweet & Sour Tofu with Rice & Veggies.

I very rarely have sweet & sour sauce as its full of sugar. So, I thought I’d try & make my own using apple juice, ketchup & no added sugar. Turned out to be absolutely amazing!

Recipe Below👇

Crispy, baked tofu which I pressed, coated in cornflour & baked for 20 minutes 200⁰C.

A mix of green beans, pineapple, red pepper, onion & garlic.

👉Recipe – for one.

Ingredients
240ml apple or pineapple juice.
3 tbsp ketchup.
3 tbsp apple cider vinegar.
1/2 tsp garlic powder
1/4 tsp ginger.
2 tbsp cornflour.
1 tbsp soy sauce.

Mix all the ingredients together in a saucepan & turn up the heat to high. Continually mix the liquid until it simmers then turn down the heat a little. Let it simmer & thicken for 3-4 minutes & it’s ready.

I thought it might not be sweet enough without sugar but was perfect.
