3 Ingredient Healthy Vegan Pancakes 🥞 RECIPE BELOW ⬇️⬇️⬇️
(It’s going to be a weekend of pancake posts people 🥞🤷🏻♀️)
I have a poll running for you guys to decide if you want to see the recipe for a chocolate orange pancake stack or a matcha stack on tomorrow’s post 😀
But for those days when I want healthy, easy-peasy pancakes in 10 mins (that’s monday-friday FYI) then these are what I’m making.
MAKES 6-8 PANCAKES :
1x ripe banana
1/2 cup oats
4 TBSP oat milk (or plant milk of choice)
OPTIONAL ADD INS:
A little sweetener of choice
I personally 1/2 TSP of vanilla extract to mine
Mash the banana well with a fork and then whisk all the ingredients together till well combined.
If you have a hand blender then the batter will be smoother if you blend it but it isn’t necessary if you want a fuss-free, easy clean up batch of pancakes. Just make sure you mix it well with the whisk if not using a blender.
As the batter has no oil in it, it is important you grease the pan well with some coconut oil or I normally use a olive oil spray so it’s not too calorie heavy from the oil.
Heat the greased pan on a medium heat and ladle 1 TBSP of batter at a time. They are ready to flip when you can easily slid a spatula under the pancake without it breaking apart. When cooking I keep lifting the edges of the pancake with the spatula to make sure they are not starting to stick.
Serve with your favourite toppings. Mine is normally berries, some @alpro yoghurt and some melted dark chocolate (because a few squares of chocolate will not kill your diet and is a must in my opinion)
