🍌 Banana Muffins!

These muffins are the perfect healthy snack to help you get through your finals😫 They are vegan and gluten free!!! Let me know if you give them a try πŸ™‚

Ingredients:
– 6 very ripe bananas
– 1/3 cup of coconut oil
– 1 chia egg (1 tbs of chia seeds mixed with 3 tbs of water)
– 1 tsp of vanilla
– 2 tbs of maple syrup
– 1 tbs of apple cider vinegar
– 2 1/2 cups of quinoa flour
– 2 tsp of cinnamon
– 2 tsp of baking powder
– 1/2 tsp of baking soda
– 2/3 cup of chocolate chips

Combine all of the ingredients into a mixing bowl and stir everything until the batter is fully combined and a smooth consistency is formed.

Evenly disperse the batter into a greased muffin tray, so each tin is about 3/4 of the way full. I also sprinkled mine with some extra chocolate chips on top. Then bake at 350F for about 30 mins !
