Banana caramel cookies! 😋

& the cookie base is only 3 ingredients! I promise these are easier than they sound & SO worth making the banana caramel for. & its a fun way to use up spotty bananas if you’re over bread (but are we ever?) 😂

•banana caramel:
1 1/2 super ripe bananas
3 tbsp coconut sugar
1 tbsp maple syrup
1/4 cup canned coconut milk
1/2 tsp vanilla + pinch sea salt
•Blend everything together in a blender until completely smooth. Then add to a pot over medium-high heat, bringing it to a boil. Reduce to a summer for 15-20 or so minutes, or until the mixture thickens. Let cool.

•cookies
1 cup almond flour
3 tbsp maple syrup
2 tbsp coconut oil or vegan butter
•Mix together until your dough forms. Roll into balls & place on a lined cookie sheet. Flatten them with your palm. Bake at 325F for 15ish mins or until the edges start to golden. Let cool. Add a dollop of the caramel to the tops of each one & place in the freezer to set up a bit (10-15mins).

•chocolate coating
1 1/2 cups @santabarbarachocolate no sugar chocolate chips
1 1/2 tbsp coconut oil
•Melt your chocolate & oil together & dip each cookie into the mixture. Return to the freezer/fridge to set! They’re amazing out of either!
