Gingerbread Pancakes. AKA: The badass version of pumpkin spice. All the ginger your mouth can handle and a little more for good measure. Recipe below. 🥞

1 1/2 cup non-dairy milk
3 Tbl avocado oil
1/2 cup molasses
1 Tbl minced @the_ginger_people
1/4 cup brown sugar
1/2 cup unsweetened apple sauce
2 cups wheat flour
1 Tbl ground ginger
2 Tbl baking powder
1 tsp cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground clove

Whisk the wet ingredients with the sugar until smooth, including the minced ginger. In a separate bowl whisk dry ingredients. Make a well in the center of the dry ingredients. Pour wet mixture into well, and, using a spatula, fold, don’t stir, to incorporate. Mixture should retain some lumps. Lightly oil your griddle or pan and measure out 1/4 cups of batter per pancake. Cook until browned on both sides. 🥞
