Refreshing Fatoosh Salad (Lebanese Salad)
1 large Pitta Bread – cut into small pieces
4 tbsp Olive Oil
1 head of Romaine Lettuce Chopped
1 Large Vine Ripe Tomato Diced
Quarter Cucumber Diced
Half a Large Green Pepper Diced
5 Radishes Diced
Spring Onion Chopped
1/4 Fresh Parsely Chopped
3 tbsp Olive Oil
2 tbsp Lemon Juice
2 Garlic Cloves pressed/grated
1 tsp Sumac
1 tsp Balsamic Glaze
1 tsp Fresh Mint finely chopped
Salt & Cracked Black Pepper
1. In a Pan Ass 4 Tbsp of Olive Oil, once oil is hot, add in the Pita Pieces and fry for 5 Mins Until the Pieces are Crispy and Golden.
2. In a large bowl combine Chopped Ingredients, Lettuce, Tomatoes, Cucumber, Green Pepper, Radish, Spring Onion, Parsley as well as the fried pieces of Pitta.
3. In a Meauring jug, add the Dressing ingredients, Olive Oil, Lemon Juice, Garlic, Sumac, Balsamic Glaze, Mint, Salt and Pepper. Whisk all ingredients until blended well.
4. Pour the Dressing onto the Salad, and toss, ensuring to coat all the salad well.
This Salad is great with some Grilled Chicken or some Grilled Halloumi
