Rediscovering how good bagels are every year like it’s my job ?

Everything Carrot Lox Bagels:

Carrot Lox:
• 2 large carrots peeled into long, thin ribbons
• 2-3 tbsp low sodium soy sauce
• 1 tbsp warm water
• 2 tsp white miso paste
• 1 tsp liquid smoke

1.) Preheat oven to 400F.
2.) In a baking dish, whisk together the soy sauce, warm water, miso paste, and liquid smoke.
3.) Add carrot ribbons to the mixture. Using your hands, toss to coat.
4.) Cover the dish with foil and bake 15-20 minutes gently tossing halfway through, until carrots are tender.

Bagels:
• Everything bagels
• Vegan cream cheese
• Sliced red onion
• Carrot lox
• Arugula
• Capers
• Fresh dill
• Black pepper

Spread cream cheese on either half of the bagel, add the rest of the ingredients, then make it a sandwich. Enjoy!
