Red Wine Mushrooms with Creamy Polenta! 😍

β€’ 1/2 tbsp Olive Oil
β€’ 1/2 tbsp @naturli Spread
β€’ 1/4 Onion
β€’ 2 tsp Garlic (minced)
β€’ 4 large Portobello Mushrooms (chopped)
β€’ 1 C Seitan & Beyond Beaf Simmering Broth (or you could just use gravy)
β€’ 1/3 C Red Wine
β€’ 1 tsp Cornflour
β€’ Salt & Pepper
Fry the onions and garlic in the olive oil and spread. Add mushrooms and cook until tender. Add all other ingredients and cook until heated through and thickened.

β€’ 140g Polenta
β€’ 1.5 C Cold Water
β€’ 1 C Boiling Water
β€’ 1/2 C Soy Milk
β€’ 1 tsp Garlic (minced)
β€’ 1/4 tsp Rosemary
β€’ 1/4 tsp Thyme
β€’ 1 tsp @naturli Spread
β€’ Salt & Pepper
Mix polenta & cold water in a pot, add the boiling water and cook over a medium heat for approximately 5 minutes. Add all other ingredients and cook for another 5 minutes or so stirring occasionally.
