Red Pepper Cashew Alfredo

step 1

Ingredients:

125g raw cashews soaked overnight
1/2 red bell pepper
200ml water
2 tbsp nutritional yeast
1 tsp origanum
1 tsp paprika
Salt and pepper to taste

Method:

Drain cashews and place them in your blender with the other ingredients.

Blend until completely smooth.

Taste and adjust seasonings as needed.

Ingredients:

2 tbsp oil
1 large onion, chopped
1 tsp garlic
1/2 red bell pepper, chopped
125g mushrooms, chopped
1 tin of red kidney beans, drained and rinsed
2 handfuls of spinach, chopped

Heat a large pan over medium heat.

Add oil and sauté onion and garlic until the onion has softened.

Add bell pepper, mushrooms and red kidney beans and stir occasionally.

Once the vegetables are soft add the sauce from step 1 into the pan and cook on medium heat until it bubbles, then reduce heat to low and cook until thickened, stirring frequently.

If the sauce is too thick, add a little water until the desired consistency is reached.

Serve with rice or pasta

( I served it on rice and topped it with some greens and tomato)
