Red Lentil Eggplant Lasagna! ??

If you guessed eggplant lasagna on my story this week you are correct! I opted for thinly sliced eggplant as the gluten-free lasagna sheets replacement and man did it work! I did forget the eggplant in the oven but I was able to salvage enough pieces. ??‍♂️ I also tried myokos mature cheese slices and the flavor fit this lasagna really well. I call this dish a win.

This is a good plantbased/vegan option to add to your meal rotation. It’s very easy to make. Just don’t forget the eggplant in the oven. ?

Ingredients: cooked red lentils (layered), eggplant (layered), myokos mature cheddar vegan cheese (layered), violife vegan parm (on top).

Red lentils cooked with onion, garlic, tomato sauce, canned tomatoes, vegetable broth, Pink Himalayan Salt, coconut oil and red pepper flakes.
