?RECIPE: Vegan Pad Thai! ?

This vegan pad thai recipe is quick and easy to make in just 30 minutes. A perfect meal for either lunch or dinner with mixed vegetables, rice noodles and tofu… ?

? Ingredients for vegan pad thai: • 250 grams dry rice noodles (vegan pad thai noodles)
• 200 grams tofu (can use marinated tofu, smoked tofu or even deep-fried tofu)
• 75 grams shallots OR 1 large onion
• 4-5 garlic cloves OR 2 tbsp garlic paste
• 3-4 cm ginger root OR 2 tbsp ginger paste
• 1/2 zest of lime
• 1 red pepper OR yellow pepper
• 5-6 mushrooms
• 2 tbsp oil (coconut oil, sesame oil or peanut oil or feel free to use oil of your choice)
