RECIPE POST: Spinach & Butternut Squash Burritos
Burritos are a Mexican dish made of a flour tortilla filled with various ingredients. The tortilla is wrapped into a sealed cylindrical shape. I’m sharing with you my variation with a twist to the traditional flour tortilla.
There are a few steps involved in the preparation of this dish
For Spinach Tortilla: Blanch 1 cup of spinach leaves. Strain & purée.
For Butternut Squash or Pumpkin tortilla: Boil 2 cups of cubed pumpkin or squash. Strain & purée.
For the dough: Take 1/2 plain flour & 1/2 cup whole wheat flour. Add salt and 1 tbsp oil. Add the purées until there is a semi-stiff dough.
Make Tortilla: Take a small ball of dough. Roll about 8” circle that is very thin and cook on a hot griddle for a few seconds on both the sides. Keep aside.
PREPARE THE FILLING:
Prepare rice: Mix chopped coriander, salt & 1 tbsp butter in 1 1/2 cup of boiled rice.
Prepare beans: Heat 1 tbsp oil in a pan. Sauté 1 finely chopped onion. Add 2 cups boiled kidney beans, 1/2 cup boiled corn, salt to taste, 1 tsp red chili pwd & 1/2 cup readymade salsa. Mix well & keep aside.
Prepare Guacamole: Mash 1 or 2 ripe avocados. Add salt to taste, black pepper & lemon.
Grate cheddar cheese
HOW TO PROCEED:
Heat a tortilla on a pan for a few seconds to make it soft. Put 2 tbsp prepared rice in the centre. Put 2 tbsp prepared beans, a tbsp of guacamole & finely shredded cheese. Roll it tightly with the ends sealed and wrap it in foil. Bake in a preheated oven at 220 degrees for 5 minutes.
Cut it into half & serve hot. Gobble down these tasty burritos.
