Recipe: hearts of palm pasta alla Norma!
2 packages @traderjoes hearts of palm pasta
1 medium eggplant, cut into 1 inch cubes
1 lb cherry tomatoes
4 cloves garlic, finely chopped
4oz fresh mozzarella, cut into small cubes
4 tbsp olive oil
3 tbsp bomba sauce (optional)
Parmesan to taste
Salt and pepper to taste
Drizzle two tbsp of olive oil and a sprinkle of salt over eggplant cubes in a large bowl. Air fry at 375F for 20 minutes, tossing halfway. Meanwhile, add the remaining two tbsp of olive oil to a large nonstick pan over meadium heat. Add garlic, cherry tomatoes and bomba sauce (if using) and a sprinkle of salt and pepper. Stir occasionally until tomatoes are soft and burst (about 20 minutes). As you stir, you can use the spatula to help them burst by gently pushing on the softest ones. When the sauce is close to done, stir in the hearts of palm pasta and cook for five minutes. Turn off heat and stir in eggplant, mozzarella and Parmesan. Top individual bowls with additional Parmesan if desired. Enjoy!
