Recipe for “No-Tuna” Salad Sandwich:
As soon as I took a bite of this amazing filling I had a Ross Geller (from Friends) moment and fell totally in love with my sandwich. The recipe comes from the @forksoverknives site and is worthy of a place in the poshest picnic basket.
1 15oz/400gm can: Chickpeas rinsed and mashed, leaving some whole
1/4 cup Diced celery
1/4 cup: Red onion, sliced or chopped
1: Lettuce leaves – I used baby kale
1: Cherry tomatoes sliced
1 tsp: Capers roughly chopped
1 tsp: Dijon or spicy brown mustard
1 tbsp: Maple syrup or agave nectar
1/4 cup: Pickle or gherkin chopped
3 tbsp: Tahini – I only used 2
1 tbsp: Sunflower seeds, roasted unsalted (optional)
Salt and pepper to taste
Chopped fresh dill – wasn’t in the recipe
but I used it anyway ?
8 slices: Whole-wheat bread
Remove some of the chickpea skins if desired then combine with the other ingredients in a small bowl.
Spread across 4 slices of whole wheat bread (toasted if you prefer) then top with lettuce leaves and sliced tomatoes.
If you like, you can smear a little more mustard on the top piece of bread to help it all stick.
