Recipe for “No-Tuna” Salad Sandwich:⁣
As soon as I took a bite of this amazing filling I had a Ross Geller (from Friends) moment and fell totally in love with my sandwich. The recipe comes from the @forksoverknives site and is worthy of a place in the poshest picnic basket.⁣

1 15oz/400gm can: Chickpeas rinsed and⁣ mashed, leaving some whole⁣
1/4 cup Diced celery⁣
1/4 cup: Red onion, sliced or chopped⁣
1: Lettuce leaves – I used baby kale⁣
1: Cherry tomatoes sliced⁣

1 tsp: Capers roughly chopped⁣
1 tsp: Dijon or spicy brown mustard⁣
1 tbsp: Maple syrup or agave nectar⁣
1/4 cup: Pickle or gherkin chopped⁣
3 tbsp: Tahini – I only used 2⁣
1 tbsp: Sunflower seeds, roasted unsalted (optional)⁣
Salt and pepper to taste⁣
Chopped fresh dill – wasn’t in the recipe⁣
but I used it anyway ?⁣

8 slices: Whole-wheat bread⁣

Remove some of the chickpea skins if desired then combine with the other ingredients in a small bowl.⁣
Spread across 4 slices of whole wheat bread (toasted if you prefer) then top with lettuce leaves and sliced tomatoes.⁣
If you like, you can smear a little more mustard on the top piece of bread to help it all stick.⁣
