*** Ingredients Required ***
~ Basmati rice cooked – 2 cups
~ Potatoes – 2 (cubed)
~ Peas – 1 cup (boiled)
~ Onion – 2 (chopped/diced)
~ Tomatoes – 2 (finely chopped)
~ Ginger-garlic paste – 1 tbsp
~ Green chilly – 1 (slit)
~ Mint-Coriander leaves – 3 tbsp (chopped)
~ Zucchini/Capsicum – 1/2 cup (optional)
~ Red chilly powder – 1/2 + 3/4 tsp
~ Coriander powder – 1/2 tsp
~ Garam masala – 1/2 tsp
~ Turmeric powder – 1/2 + 1/2tsp
~ Kichen king masala – 1/2 tsp
~ Cumin seeds – 1 tsp
~ Fennel seeds – 1 tsp
~ Cardamom – 4-5
~ Cloves – 4-5
~ Cinnamon stick – 1 inch
~ Bay leaf – 1
~ Star anise – 2
~ Ghee – 2 tbsp
~ Oil – As required
~ Salt – As required
*** Potato/Aloo fries ***
~ Add oil in a pan and toss the cubes potatoes sprinkling little salt, turmeric powder and red chilly powder until it’s soft inside and crunchy outside. Keep this aside once done
~ In a wok when the ghee is hot enough, add bay leaf, cumin, fennel, star anise, cinnamon stick, cloves and cardamom and sauté everything in low flame for 1-2 mins
~ Add the green chilly and onions one by one and sauté [email protected] onions turn translucent
~ Add ginger-garlic paste, mint-coriander leaves and sauté [email protected] onions turn golden in color
~ Add the chopped tomatoes and cook it in high flame for 1-2 min until the tomato juice gets evaporated
~ Ads all the spice powder and sauté in low-med flame for 4-5 mins
~ Add the boiled peas and mix it well
~ Add the zucchini/capsicum at this stage and sauté in high flame for a min
~ Add salt and mix everything
~ Add the cooked rice into the masala mixture and sauté everything together
~ Now add the roasted potatoes to the rice. Put it for dum for 2-3 mins
~ Garnish the Biryani with coriander leaves/roasted onions/nuts and serve it hot
