RAW ZUCCHINI SUSHI ROLLS WITH SWEET CHILLI DIP⠀

⁣+ GLUTEN FREE ⠀⠀⠀⠀
+ SOY FREE⠀⠀⠀⠀
+ OIL FREE ⠀⠀
+ REFINED SUGAR FREE ⠀⠀⠀⠀

​Ingredients:⠀

Rolls:⠀
1 medium zucchini⠀
1/3 of a medium cauliflower, florets⠀
3 medjool dates, soaked⠀
1 carrot, thinly sliced⠀
1/2 cucumber, thinly sliced ⠀
1/2 cup red cabbage, sliced ⠀
1/2 red capsicum, thinly sliced ⠀
1 celery stalk, thinly sliced⠀
1/2 cup coriander⠀

Dip:⠀
3 medjool dates⠀
1 medium tomato, sliced ⠀
1 lemon, juice⠀
2 tbsp water⠀
1/3 tsp chilli powder⠀
1/3 tsp paprika powder ⠀
Pinch of salt⠀

Instructions:⠀

Place the cauliflower florets in a food processor along with the dates and pulse until a rice-like texture forms. Place in a bowl and set aside.⠀

Using a vegetable peeler, slice each zucchini into thin, flat strips. Place zucchini on a paper towel-lined plate to sit while you prepare the other ingredients.⠀

Now rinse all the vegetables and cut into shapes as listed in the ingredients section.⠀

For filling the actual rolls, make sure you have all ingredients close by. On a cutting board, lay the zucchini slices down horizontally (the long side faces you). Spread 1 teaspoon of cauliflower rice on top, then top the left side with one of each vegetable strip⠀

Starting from the left side, tightly roll each zucchini slice. Continue until you have used all the zucchini slices. ⠀

Dip:⠀
Place all ingredients in a blender and blend until smooth. Transfer into a bowl and garnish with coriander. ⠀
