Raw fig, almond & buckwheat log bites✨
One of my fave things to snack on is energy balls, although I have no self control what so ever because they’re so moreish? however, when they’re full of healthy fats, nature’s protein & nature’s sweeteners, there really is no shame in eating the whole batch in one sitting ??

• 50g whole almonds, with skin
• 50g raw buckwheat
• 100g dried figs, soaked in boiling water for 10 mins
• 3 tsp raw cacao powder
• 3 tsp milled flaxseed or flaxseed powder, mixed with 4 tsp water.
• pinch of salt
• 140g flaked almonds
• 1tsp vanilla powder
• 8tsp water
• 3 tsp lemon juice
– optional for those with a sweet tooth: add in 1-2 tsp syrup, such as @sweetfreedomuk ‘s fruit syrup or @thegroovyfoodcompany ‘s agave nectars ✨
1. Start by pre soaking your figs in boiling water. Set aside and begin blending your buckwheat, & almonds (whole and flaked) together in a food processor until a fine crumb.
2. Add in the vanilla, flaxseed egg (water & flaxseed mixed together until thickened), cacao powder, salt, lemon juice, water & syrup, if using.
3. Blend again. Then transfer this dry mixture into a bowl.
4. Discard the water from the soaked figs and blend until jammy & sticky. It might help to manually mash the figs up with a fork if your blender is too wide that the figs just stick to the sides. Then add in the dry mixture and blend until everything starts to stick together.
5. Take the processor off and use your hands to squish the mixture into a mould. Then place the moulded mixture onto a flat surface and roll into a long sausage-like ‘log’.
6. Wrap in cling film and leave in the fridge to set for approx 1hr.
7. Once set, remove the cling film and slice into approx 11 35g(ish) mini log bites. Then if you wish decorate…
I used melted vegan chocolate on mine, with some of them having a layer of almond butter underneath. Then topped with various superfoods??
